Mr Evison gained 51,083 votes, with Labour candidate Simon O'Rourke coming second with 46,846 votes.
The Liberal Democrats' Bob Morgan secured strong backing in Hull, but came third with 30,833 votes as numbers elsewhere swung in favour of Mr Evison.
In the East Riding, the turnout was 17.05%, with 46,198 ballots recorded and 270,915 eligible voters.
Mr Evison will now resume his role with the priority of tackling anti-social behaviour.
He said: "This is the best job I've ever had. You have the tools at your discretion to be able to make differences in lives.
"I am obviously very delighted."
Mr Evison also said the relationship between the public and the police is "something we need to work on" in order to "build that public trust".
