Finch is set to lead the side in their opening matches until Stewart is fully fit to take over as skipper.
Italy international Stewart injured his thigh in his side's County Championship draw with Leicestershire.
Adam Hollioake will remain as head coach for the 50-over competition.
"Grant has stepped into the captaincy fold really well over the past couple of weeks and we've been impressed by his leadership," Kent's director of cricket Simon Cook told the club's website., external
"We're lucky to now have more players taking on senior roles in the squad, and Finchy is another player that has become a senior figure in the dressing room.
"We hope that the experience of captaining the side this August will continue their development into leadership roles among the wider squad."
Kent begin their One Day Cup campaign away to Sussex Sharks on Thursday.
