After decades in Nantwich, the international cheese and dairy awards are being held in Stafford today.
There are about 5,000 entries from more than 30 countries at the event, being held at the Staffordshire County Showground.
The show opens to the public on Friday, with celebrity chefs making an appearance.
Quote MessageWe're going to be hit with about 250 or so judges and 130 stewards. They'll get briefed. They'll then set off to start the judging process and then it'll get whittled down through the course of the morning to eventually... about 10 or 15 cheese on a table."

A consultation ends today over plans to relax rules on the number of deliveries overseas lorry drivers can make in the UK.
The move is designed to increase deliveries which have been held up as a result of a shortage of HGV drivers.
Under the new plans, drivers will be able to make unlimited deliveries or collections within a 14-day period. Currently EU drivers can only make two pick-ups or drop-offs each week under cabotage rules.
UK drivers fear they might lose work to cheaper EU rivals.
Speaking to BBC Breakfast from Chamberlain Transport, a haulage firm in Crewe, Simon Reynish from The Chartered Institute of Logistics and Transport was asked if the scheme would work.
He replied: "It may have limited success, but it will definitely dilute the already very fragile supply chains picture in the UK especially with the driver shortage..... We need to find far more British people to be actually learning how to drive."
The government said it was not that it was planning increasing cabotage to undermine UK haulage firms. It stated this was a short-term solution and in the long term it was all about upskilling British workers on higher pay.

West Bromwich Albion have slipped out of the automatic promotion places in the Championship, after suffering only their second league defeat of the season.
They lost 2-1 at Swansea City, who came from behind to clinch victory, courtesy of a late winner from Jamie Paterson (pictured).
Karlan Grant's fifth goal in as many games had put the Baggies in front inside the first minute, but they are now in third place in the table.
Albion head coach Valerien Ismael said: "We started the game well - good pressing, we forced a lot of long balls, Swansea didn't create a big chance. Our problem throughout the game was our transition. We didn't keep the ball.
"At the end we made the big mistake. This is the reason we lost the game. We don't need to overreact. We play the next game on Saturday and we need the right reaction."
Here are some of the stories on the Shropshire Star website:
Artist's impressions have been released of plans for a gigafactory on the site of Coventry Airport.
Plans were submitted earlier this year, external for the plant which, if approved, will become the UK’s largest single industrial facility, covering the same area as 74 full-size football pitches
Gigafactories are built to create electric car batteries.
Securing the factory could create thousands of jobs and attract up to £2bn of investment to the region, the city council has said.
Andy Street, West Midlands Mayor, said: “From securing the future of our region’s automotive industry and the huge economic and job creation that would bring, to helping protect our planet from the climate change emergency, a West Midlands Gigafactory would be a complete game-changer for our region – and we are making it happen.
“By submitting our planning application earlier this year, and now answering the difficult question around power supply and renewable energy, we are doing what we can to be able to get the site operational ASAP once a commercial negotiation between supplier and customer concludes.
