The fear of many travellers is that Havana may lose its character if the market truly opens up to American investment.

But restaurant owner Niuris Higueras says she is not worried about an influx of US multinationals muscling in on a possible Havana boom.

“I want Cuba to experience Taco Bell and Pizza Hut, but I want mainly local businesses to thrive.”

Ms Higueras travels to Cuzco, Peru, to buy some of her ingredients, and writes a new menu every day for her restaurant, Atelier, because local supplies are so unreliable.

Renier Beltram stops to talk to his aunt Liliana

Sitting on a bike carrying coconuts, Renier Beltram has stopped to talk to his aunt Liliana who runs a small shop selling religious figures and bracelets.

Renier says he’s a pacifist, and the way the US and Cuba have tried to put hostility behind them is, he says, a positive sign for world peace.

“What we are most worried about is war and this can be an example to others. It also means the US can have better relations with Ecuador, Nicaragua and other Latin American countries.”

Liliana has a relative in Canada and she says the biggest change in the new relationship is that people who have family in the US can receive more in the post than they used to.
