The cost of basic pancake ingredients has increased by almost 30% in five years, Guernsey government data shows.

Latest figures from the States show the price of flour, eggs and milk have gone up by 27% since 2019.

Chefs and bakers in Guernsey said they had noticed changes in trends due to food inflation.

Freight costs are driving prices up for restaurants and customers, according to Prenolan Neidoo, executive chef at the Old Government House Hotel.

Mr Neidoo said everyday items are seeing the largest increase.

"Eggs, sugar, tomatoes, bread, rapeseed oil have really jumped up," he said.

Mr Neidoo said buying large quantities of everyday items had highlighted the issue.

"Things you shouldn't think would be going up have," he said.

"You don't feel it in your pocket but if you take your monthly receipt you'll notice that jump and you're spending £50 extra on your weekly grocery shop."

'Big effect'

Lydia Downing, of cake business Lydia Baking, has seen a decline in people buying her products.

"I still have regular customers that order birthday cakes... but fewer people are ordering a box of brownies in the middle of the week," she said.

She said she had to shop around to find ingredients at the right price.

"I feel every time I go to the shop, something has changed," she said.

"I have to increase my prices and it does have quite a big effect."
