It is an important sector of the economy, but for many it is just a blur as they drive on by.
It is a place where passing drivers can purchase not only meals, but also anything from freshly picked produce to live chickens.
BBC News spent an afternoon at a lay-by off the A10 at Brandon Creek in Cambridgeshire, as guests of Audrey Prentice, Steve Webb and their pet dog Nelson.
They explained what it is like when your day job is next to a busy road, which is your source of customers.
