#DontHitSnooze: Salmon egg-fried cauliflower rice

Salmon Egg-fried cauliflower rice

Serves 2. You'll need a small frying or skillet pan and a food processor if using whole cauliflower florets

Approx cost : £1.02 per portion (recipes makes 2 portions)

Ingredients

160g cauliflower florets or 160g cauliflower rice/couscous pre-prepared - bought from the supermarket

1 tbsp olive oil

1 small tin of wild salmon, drained and broken into smaller pieces with a fork

2 1/2 tbsp frozen peas

1/8 tsp fish sauce

1/4 tsp soy sauce

1 large egg, whisked

2 spring onions, finely sliced on the diagonal

Instructions

  1. Heat the olive oil in the small frying pan.

  2. Add the cauliflower rice or pulse the uncooked cauliflower in a food processor until a rice-like consistency is reached then add this to the pan.

  3. Stir for about 6 minutes then add the salmon, frozen peas, fish sauce and soy sauce.

  4. Stir until everything is heated through (about 2 minutes) then add the whisked egg. Immediately remove from the heat and stir for about 1 minute. Serve with the sliced spring onions on top.
