A cheese which hasn't been seen on the shelves for more than 100 years is making a comeback after a chance discovery.
Shropshire Cheese, said to be similar to Lancashire, with a crumbly, buttery texture, but with a milder taste, was last recorded as being in production in 1912.
Dudley Martin, dairy manager at the Ludlow Food Centre, said he decided to bring it back after finding references to it while carrying out research into local dairies.
He said the first mention of the Shropshire Cheese was in a document from 1562 and that it appeared to reach a peak in its popularity in between 1750 and 1800.
Mr Martin believes it died out because small-scale producers in the county lacked the ability to transport it around the country in the early 20th Century.
