For O'Sullivan it was another gold medal having won two team titles with Jersey and the individual compound title.
"The games have been a little bit stressful, there;s been quite a lot of pressure that I've put on myself to perform at these games," O'Sullivan told BBC Channel Islands.
"It's quite a high level of competition so every day you have to keep going.
"We're battling in quite tough conditions which I haven't been practising in, but we keep going."
Silcock wins second table tennis gold
Jersey's Hannah Silcock won her first-ever table tennis singles gold medal, to add to the team gold she won earlier in the week.

Guernsey's eight-time gold medallist Alice Edwards took bronze after losing 4-1 to Donner in the semi-finals as she returned to the Island Games for the first time since 2015.
"It's amazing. Just turning 16 and my first Island Games going up against someone who's won it many years before," Silcock told BBC Channel Islands
"I had nerves going into it, but as soon as I started getting into the momentum the crowd and the Jersey supporters were all behind me and it just felt amazing."
Meanwhile Silcock's Jersey teammate Jordan Wykes was beaten 4-2 in the men's singles final by Gotland's top seed Max Hedbom to take home a silver medal.
Jersey's Luc Miller got a bronze after losing 4-0 to Hedbom in the semi-finals.
