#DontHitSnooze: Layered salad

Layered Salad

Serves 1. You'll need a tall glass jar with a lid, or a plastic lunchbox.

Approx cost : £2.09 per portion

Ingredients

  • Dressing - 1 tsp honey, 1 1/2 tsp apple cider vinegar, 1 tsp lemon juice, 3 tsp olive oil, pinch of salt and pepper

  • A handful (35g) thinly sliced white cabbage

  • A handful (70g) finely cubed cucumber (about a 6 cm piece, cubed)

  • A handful (80g) pickled beetroot or beetroot in vinegar, cubed or chopped

  • A tin (112g) of tuna, drained - or a handful of tinned chickpeas

Instructions

  1. Mix together the dressing ingredients and place in the bottom of your jar

  2. Add the white cabbage, then the cucumber, then the beetroot

  3. Mix together the drained tuna or chickpeas, olive oil and lemon juice

  4. Pop the tuna mixed with oil and lemon juice on top of the beetroot layer

  5. Close the lid of the jar and leave in the fridge overnight or all morning.

Simply shake to distribute the dressing evenly, then eat!
