#DontHitSnooze: Spinach and onion frittata

Spinach and onion frittata

Serves 1. You'll need a muffin pan or two silicone muffin cases and a small frying pan or saucepan

Approx cost: £1.58 for 2 frittatas

Ingredients

  • 1 tsp olive oil

  • 1/4 of an onion, finely chopped

  • 1 cup of uncooked spinach

  • Salt and pepper

  • 2 eggs

  • 2 slices of prosciutto ham, or feta cheese

Instructions

  1. Preheat the oven to 180 degrees centigrade

  2. Heat the olive oil in a small frying pan or saucepan

  3. Add the onion and sauté for about 5 minutes, until translucent. Add the spinach and stir for one minute more

  4. Remove from the heat

  5. Whisk together the eggs with some salt and pepper

  6. Line two holes of a muffin tray with torn prosciutto ham or, if not using ham, grease the holes with butter, marg or cooking spray

  7. Whisk the onion and spinach into the seasoned egg mixture. Pour this combined mixture evenly into the muffin cases

  8. Bake for 20 mins. Remove from the pan once a little cooler. Enjoy straight away or pack for work!
